Does anyone know what was said in ancient Greek when someone died in the Byzantine empire? (Another formule, such as RIP)

I didn't understand what exactly you are looking for. A phrase, similar to RIP, was ἀνάπαυσον τὴν ψυχὴν τοῦ δούλου σου (=Rest the soull of your servant), or Αναπαύσου εν ειρήνη (=Rest In Peace) but I don't know if this was included in what they usually wrote on gravestones. A short phrase people say when someone dies is not RIP but Αιωνία του η μνήμη (=may he always be remembered)
The words read in funerals, are among the most beautiful and poetic of Greek Orthodox Church(!) especially the phrase:

Πᾶν ἁμάρτημα τὸ παρ’ αὐτοῦ πραχθὲν ἐν λόγῳ ἢ ἔργῳ ἢ διανοίᾳ, ὡς ἀγαθὸς καὶ φιλάνθρωπος Θεός, συγχώρησον· ὅτι οὐκ ἔστιν ἄνθρωπος, ὃς ζήσεται καὶ οὐχ ἁμαρτήσει· σὺ γὰρ μόνος ἐκτὸς ἁμαρτίας ὑπάρχεις, ἡ δικαιοσύνη σου δικαιοσύνη εἰς τὸν αἰῶνα, καὶ ὁ νόμος σου ἀλήθεια.
